Makes 2 Servings
Total Cooking Time: 10 minutes
- 2 eggs, large
- 1 cup of mixed vegetables, frozen (corn, black beans and peppers)
- 1 tortilla, flour
- 1/2 cup of cheddar cheese shreds, low-fat
- 1/4 cup of salsa, mild or hot – your choice
- Mix vegetables and eggs. Spread mixture on medium or large plate sprayed with non-stick spray.
- Cook in microwave for one minute. Use a fork to stir and microwave once again, till veggies are warm and eggs have cooked.
- Pile on tortilla and top with cheese shreds and salsa. Serve.
